Edo Kobayashi Group's flagship omakase on Havre 77 - chef Yoshimasa Aoki's traditional edomae. Sushi Kyo (also known as Kyo or Kyo Sushiya) is the flagship edomae sushi restaurant of the Edo Kobayashi group on Havre 77 in Colonia Juárez - the same building complex that houses Loup Bar and several sister concepts. Led by head chef Yoshimasa Aoki, Kyo offers both guided omakase experiences at the sushi bar and à la carte menus, with a strong focus on traditional edomae technique: fish aged or marinated in vinegar and salt, nigiri-forward, hand-shaped to order. Sushi rice and fish quality are the point; ambiance is minimal and intimate. Reservations required via phone. Premium pricing - expect USD 150+ per person.
